Winter Cooking Classes

Saturday, February 21st
12-3 p.m.
HOSTED BY CHEF RILEY BENNETT
We will be doing the following based on classical cuts and knife skills of chopping, dicing, chiffonade, deboning fish and using a mandoline for ease of preparation.
Course 1-Shaved fennel and celery salad, orange segments, toasted hazelnuts.
Course 2-Seafood Bouillabaisse (Classical French Stew with some Twin Elements modifications) & matchstick potatoes.  Demonstration of knife sharpening using a whetstone.
Sunday, February 22nd
12-3 p.m.
HOSTED BY CHEF SABRINA FALONE

Sabrina will be working with the class to make their own meatballs and help in the preparation of the dessert.  Classic Sicilian Spaghetti and Meatballs with homemade Cannoli for dessert.
